Go-to Instapot Recipe

This is one of my all-star Instapot recipes that I think everyone needs in their lives, especially if you are feeding a family! My sister shared it with me . It’s so easy to make and definitely a crowd pleaser. This recipe is easily on my rotation one a week or every other week.


  • Chicken Breasts (2-3)
  • PACE Picante Hot Salsa
  • Corn
  • Black Beans
  • Taco seasoning

Pour half the jar of the PACE Picante salsa into the Instapot (I use the hot to keep it spicy!). This is important, because if there’s no liquid base the chicken will burn and stick to the pot.

Then throw in the chicken. Like I said, I usually throw in 2-3 breasts because this is a great bulk recipe. It can go in frozen, which is great if you’re like me and forget to defrost your chicken before cooking! 

Add the rest of the salsa, a can of corn and one of black beans as well. Finally, sprinkle taco seasoning on top.  also sometimes add a little cumin or cayenne (just a few shakes!) to really kick it up a notch. 

Cover and cook on high pressure for 45 minutes.  

Once it’s all done, take a fork and shred the chicken in the pot. This helps to absorb some of the liquid and soak in alllll the flavor. 

I used to put this in a bowl over Mexican rice, but I actually prefer it now as a burrito with a little cheese and guac. SO good and simple- and like I said, great in bulk!
